(Hainanese) Chicken Rice

Chicken Rice

Every typical Singaporean loves Chicken Rice, especially the favourite 'Hainanese' Chicken Rice.
Us Singaporeans consider Chicken Rice as one of our 'local foods', even though it was adapted from Hainan, China.
Hainanese Chicken Rice is known to be related to many different countries, such as Malaysia, Singapore and China. Although Vietnam and Thailand are not known to be associated to chicken rice, they are also known to be famous for chicken rice.

The chicken is known to be poached at sub-boiling temperatures. (around 50 degrees celcius)
The fat is usually kept on because customers usually prefer eating the chicken with it's skin and fat left on.
This dish is usually served with lettuce, garlic or ginger.

Hokkien mee

Hokkien mee

Since I'm from Singapore, one of my favourite Singaporean dishes is Hokkien mee. It can be found in both Singapore and Malaysia, so it is technically a very famous dish which is usually sold in hawker centres.

The dish consists of many ingredients, such as: rice noodles, egg, prawns, pork, squid, vegetables, lard :) and lime.

Types:

  • Hokkien black mee
  • Hokkien fried mee
Differences:
Hokkien black mee:
  1. Is commonly served in Penang and Singapore
Hokkien fried mee:
  1. Is commonly served in KL (Kuala Lumpur) and Klang Valley
Usually, in Hokkien mee, the main dishes are egg, prawns and squid, and sometimes maybe even fish cake.
The lime juice from the lime gives the dish even more flavour, which is why Singaporeans enjoy it the most with lime.

  • Minced onion
  • Black pepper
  • Crushed garlic

Put 6 noodles over over the meat sauce and spread with 1 and a half of ricotta cheese, then top it with one third mozarella and/or parmesan cheese. You can cover the dish with tin foil, and spray the foil with cooking spray to prevent the mixture from sticking to the tin foil.
6. Bake the mixture in your oven for around 25 min, remove the tin foil and bake for an additional 25 min. Cool for 15 min before serving.

Chocolate brownies

Brownies

A brownie is a squarish, flat cake dessert. It is a mixture of cake and cookies and comes in different shapes and sizes, mostly in a square shape.

They usually have a heavy texture, and might include nuts, chocolate fudge, or chocolate chips. Brownies are meant to be eaten by hand, and accompanied with a warm drink, normally tea, coffee, or warm milk.
They are found only in coffee shops (cafes) and restaurants. In restaurants, they are always served as desserts.

Pana cotta

Pana cotta

Pana Cotta is an Italian dessert of sweetened cream thickened with gelatin and molded. They come in many flavourings (rum, coffee, vanilla, etc.)

Italian Chefs make pana cotta by dissolving sugar in warm cream. They flavour the cream by infusing spices into the cream. They soften the gelatin into cold liquid, then pour the mixture into molds.

Pana cotta is often served with fruits (like strawberries and blueberries) to add more flavour to it.
